Appetizer #1: AÇAÍ Banana Bread Snack Treat
This melty, gooey bread is sure to have all who consume it going back for more. It's hearty, healthy and vegan-approved!
WHAT YOU'LL NEED
- 1 Thawed SAMBAZON Açaí Original Blend Superfruit Pack
- 1/2 Cup Vegan Butter (at room temp)
- 1 Cup Vegan Sugar3 Extra Large Ripe Bananas
- 2 Egg Replacement Equivalents
- 1/2 Tsp Vanilla
- 1/2 Tsp Lemon Juice
- 1 1/2 Cup Unbleached Flour
- 1 1/2 Tbsp Hot Water
HOW TO MAKE IT
Preheat the oven to 350 degrees.
To prepare, butter a standard loaf pan, mash bananas until smooth with a few chunks, and separate egg whites and yolks in two different bowls. Cream butter and sugar together in a large bowl. Add bananas, egg yolks, vanilla, lemon juice, and baking soda and mix thoroughly then stir in flour till just combined. Beat egg whites until stiff, then gently fold into batter until blended. Lastly, stir in hot water. Pour half of the batter into your loaf pan, add the Açaí pack to make a mid-layer, then pour the remaining batter to fill. Using a wood skewer or other similar shaped device, gently stir the batter in a circular motion to make Açaí swirls. Bake for about 45 minutes or until a toothpick inserted in the center comes out clean. Let cool for 15 minutes or so and serve.
Appetizer #2: Chocolate AÇAÍ Truffle Bites Snack Treat
These Açaí-based bites are perfect for the chocolate lover.
WHAT YOU'LL NEED
- 1 SAMBAZON Açaí Original Blend Superfruit Pack
- ¼ Cup Coconut Oil, melted
- ½ Cup Medjool Dates, pits removed
- ¼ Cup Hemp Seeds
- 2 Tbsp Cacao Powder
- 2 Tbsp Honey
- Pinch of
- Chocolate Sauce (for rolling truffled in)
- Toppings: Bee Pollen, Coconut Flakes, Cacao Nibs, Cayenne Powder
HOW TO MAKE IT
In a food processor, combine açaí, coconut oil, dates, coconut flakes, hemp seeds, cacao powder, honey, and salt.
Put the mix in a bowl, cover and chill for at least an hour. Once your mix has hardened, scoop out teaspoon sized balls. Roll each ball in chocolate sauce. Make sure they’re completely covered, then set aside (on wax paper) to harden.
Before the chocolate completely sets, sprinkle with your toppings.
Appetizer #3: Gluten-Free Vegan AÇAÍ Berry Pie
Pie is often overlooked as an appetizer. It shouldn’t be! It’s an easy option, giving everyone a hearty slice!
WHAT YOU'LL NEED
For the Crust:
- 1 Gluten Free Pie Crust
For the Filling:
- 2 SAMBAZON Açaí Superfruit Packs (Original Blend, Pure Unsweetened, or Performance Protein)
- 3 Cups Frozen Mixed Berries
- 1-2 Tbsp Coconut Oil
- Optional: Ground Ginger, Dash of Cinnamonm Dash of Vanilla
For the Crumble Topping:
- 1 - 2 Cups Gluten Free Oats
- 1/4 - 1/2 Cups Melted Coconut Oil
- Dash of Sea Salt
- Dash Cinnamon
- Optional: Small Handful Chopped Nuts and Seeds
HOW TO MAKE IT
Preheat the oven to 350° F. To Make Filling: In a blender, combine SAMBAZON Superfruit Packs (melted), frozen mixed berries and optional ginger or cinnamon. Blend until smooth and combined. In a bowl, add the rest of the berries and then add your blended mixture. Stir to combine. Pour mixture into your pie crust, evenly smooth out the mixture. Over the top, evenly distribute small dollops of coconut oil. Top with crumble mixture. To Make Crumble: In a bowl, combine all ingredients.
Make sure all oats are covered. Scoop atop pie filling, gently pat down. Bake 350° F for 30 minutes, or until golden brown.
Appetizer #4: Chocolate Covered Bananas Snack Treat
Completely customizable, these frozen banana treats take no effort. Cool in temperature they are the perfect summer treat. Slice them to make the most of them!
WHAT YOU'LL NEED
- 1 SAMBAZON Açaí Superfruit Pack
- Frozen Bananas (peeled and frozen for at least an hour)
- 1 Bar Vegan Dark Chocolate
- Sea Salt
- Vanilla Extract
- Coconut Oil
HOW TO MAKE IT
To Make the Chocolate Sauce: Using a double boiler, heat chocolate chunks, oil, salt, vanilla, and Açaí pack. You might need to add a little extra oil, but keep stirring constantly so nothing burns.
To Make the Bananas: Line a baking sheet with parchment paper and get your frozen bananas from the freezer. You can either roll them in chocolate or spread the warm chocolate sauce on them with a knife. Once they’re dipped in chocolate (and it hasn’t hardened yet!), add your toppings and then put back in the freezer to harden. Let freeze for at least an hour.
Appetizer #5: Raw Vegan AÇAÍ Brownies Snack Treat
Brownies can easily double as an appetizer. Enjoy these at home, or save for after your meal!
WHAT YOU'LL NEED
For the Brownies:
- 1 SAMBAZON Açaí Original Blend Superfruit Pack
- 1 1/2 Cup Walnuts
- 6 Tbsp Vegan Cacao Powder1
- 1/2 Tsp Vanilla
- 2 1/2 Cup Pitted Dates
- Pinch Himalayan Sea Salt
For the Topping:
- 3/4 Cup Raw Cashews
- 2 Tbsp Melted Coconut Oil
- 3 Tbsp Maple Syrup
- 1/2 SAMBAZON Original Blend Açaí Superfruit Pack
- Frozen Mixed Berries (optional)
HOW TO MAKE IT
Combine SAMBAZON Açaí packs, dates, walnuts, cacao, vanilla, and salt in a food processor. Process until smooth. scraping down sides as needed. Lightly grease an 8 x 8 baking pan with coconut oil or use parchment paper. Transfer dough to the pan and press firmly until evenly distributed. Put in the fridge for at least two hours.
For Topping: In a food processor, quickly pulse raw cashews, maple or honey, Açaí and coconut oil. Add a pinch of salt if you'd like and a handful of frozen mixed berries. Once the brownies harden up in the fridge for about two hours, top with frosting and put back in the fridge for another hour or two. Cut and serve.

WHAT YOU'LL NEED
- 2 Cups of Fresh Organic Blueberries or Blackberries

- A few sprigs of Mint or Basil
HOW TO MAKE IT
Use vegan pancake mix to make the pancakes. For the compote, in a saucepan over medium heat, bring the blueberries/blackberries and Açaí pack to cook.
If desired, add your dash of cinnamon and sprigs of mint/basil and stir often. Cook down to a thick syrup that you can draw your spoon through and see the bottom of the pan. Spoon over your acai pancakes.
